Arla Foods, Inc.
Arla Foods continues the craftsmanship of one of Wisconsin’s most outstanding specialty cheesemakers, White Clover Dairy, which it purchased in 2006. The global co-op is honoring the traditions of small, local cheesemakers that date back to 1897. Today, the milk is still procured from local farmers. The Dofino® line of flavored Goudas, made by a Master Cheesemaker, represents the fusion of Old World heritage with updated flavors. Braun Swiss Käse
Braun Suisse Käse cheeses are made exclusively from the prized milk of Brown Swiss dairy cows. The milk’s rich composition produces a silky-soft texture and a premium, buttery flavor. The line is crafted by Wisconsin cheesemaker Silvan Blum at Chalet Cheese Co-op, one of the state’s most historic dairy cooperatives. Brunkow Cheese, founded in 1899, is located in the rolling hills of rural southwestern Wisconsin. Butler Farms
Butler Farms is the first licensed Grade A sheep dairy in the United States. The company’s Camembert is made from sheep’s milk and cow’s cream with a light mold rind and rich, creamy texture. Capri Cheesery
Artisan goat cheeses are handcrafted in small batches in the heart of Wisconsin’s Driftless area by cheesemaker Felix Thalhammer. Several types of Goat Feta are available, including Fresh-French Goat Feta, Sharp-Greek Goat Feta, Aged-Bulgarian Goat Feta and Mediterranean-style Feta with herb-thyme flavoring.

Fantôme Farm
Fantôme Farm, Wisconsin’s oldest artisan farmstead goat cheese producer, takes pride in its heritage of fresh goat milk cheeses. Fresh Chèvre is available plain and flavored; Fleuri Noir is an award-winning, bloomy-rind cheese hand-ladled into forms, dusted with ash and salt, and then allowed to age for several weeks. Ridgeway Ghost is formed into small discs and coated in pink rock salt. Moreso is a classic Chèvre, only coated in vegetable ash and pressed, giving it a firmer texture. Thyme Logs are hand formed and feature dried thyme on the top. Other raw milk cheeses are made when milk is plentiful which allows the full flora of the small herd’s milk to express itself more completely. Cheese is produced April through December.

Holland’s Family Cheese
Rolf and Marieke Penterman emigrated with their family from the Netherlands to Wisconsin in 2002 to pursue their passion for dairy farming. In their farmstead creamery, Marieke crafts authentic Gouda-Style cheeses. They have a slightly sweet, nutty flavor that grows more complex as they age on wooden shelves. The milk is piped directly to the creamery from the first milking of the day and made into cheese within five hours. Varieties include classic, raw milk and Foenugreek, which took Best of Class at the 2007 U.S. Championship Cheese contest. The Wisconsin Sheep Dairy Cooperative is the single largest source of high quality sheep milk in the United States, comprised of 15 members. Dante is an aged, 100% sheep milk cheese with a buttery, nutty flavor that took Best in Class at the 2006 American Cheese Society competition; Mona is an aged cheese made from a pleasing blend of sheep milk and cow milk, producing an appealing, robust flavor. It took third at the 2008 American Cheese Society competition.

Established in 1983, Woolwich Dairy Inc. is family-owned and operated by Tony and Olga Dutra. Yellowstone Cheese
Yellowstone Cheese owners Jeremy and Heidi Kenealy built a farmstead cheese plant on their 75-cow dairy farm in 2007. Milk from their herd is made into over 40 different varieties of cheese. A signature cheese, Yellowstone Crunch, tastes like a candy bar and includes chocolate, caramel and walnuts. Various Wisconsin cheeses and specialty items are also available in the on-farm retail store.
