Who are the Wisconsin Dairy Artisans?
Wisconsin dairy artisans craft a variety of dairy products, including cheese, bottled milk, farmstead yogurt, hand-packed butter and ice cream using milk from cows, goats and sheep (or a blend of milks from two or three of these species). They may or may not be farmstead producers, but all artisan products capture the flavor of their environment. Wisconsin ’s tradition of outstanding dairy products starts with the soil: rolling hills and deposits of glacial till provide a fertile nutrient base for healthy pastures.
